My attention has officially shifted to my normal springtime mayhem. I know it’s still winter, but the weather down here doesn’t really conform to what it says on the calendar, and we all know that.
Anyway, this dish has been weighing on my mind as I think about our local festival, and would you believe I had access to it? Right under my nose for years, and I just didn’t think to look! Enjoy!
Provided by Louie Flores, as published in “Favorite Recipes” by the La Salle County Fair Association, 2005:
3 cup flour
2 tsp baking powder
1 tsp salt
1/2 cup shortening
Mix flour, baking powder, and salt. Add shortening and mix with hand. Add water and mix and knead. Form into two balls. Roll out to about 1/2 inch thick. Bake in Dutch oven over embers or in oven at 450 degrees for about 12 minutes.
