Do you like soup? I like some soups, but I’m fairly particular about them. Old faithful for my taste is tomato soup. I rarely meet a tomato soup that I don’t like.
After it was so cold last week I’ve had soup on my mind. The good news is that the weather has already come back around. The extra good news is that I don’t think it’s ever a bad time for tomato soup.
February/March 2021 issue: ‘Country Woman Magazine’, provided by Jean Sullivan:
1/4 cup finely chopped onion
1 tbsp butter
1/4 tsp dried basil
1/4 tsp paprika
1/8 tsp garlic powder
1 can (10 3/4 oz) condensed tomato soup, undiluted
1 cup 2% milk
fresh basil leaves, optional
In a saucepan, saute onion in butter until tender. Add the basil, paprika, and garlic powder. Stir in soup and milk until well blended.
Cook over medium heat until heated through, 6 – 8 minutes. If desired, top with fresh basil leaves.
