You never know when a simple cookie can be the thing to save you. It’s an easy recipe to teach to kids and new bakers, or an easy recipe to take you back to basics.
Provided by Mona Hoyle, as printed in “Recipes & Remembrances, A collection by FUMC,” Pearsall, 2004:
1 cup brown sugar
1 cup white sugar
1 cup peanut butter
1 cup shortening or butter
1 tsp soda
2 1/2 cups flour
1 tsp vanilla
Combine butter, sugars, eggs, and peanut butter. Add dry ingredients. Add vanilla. Mix well. Shape into small balls. Place on cookie sheet and press with a fork. Bake 8 – 10 minutes at 375˚. Yield: 3 to 4 dozen.
