For Cinco de Mayo, it just seemed appropriate to share a decent salsa recipe. Enjoy this one!
Tasty Salsa, shared by Patsy Ramirez from Pearsall
As printed in A Taste of Heaven, from the Sacred Heart Catholic Church in Cotulla, 2003
1 Tbsp. olive oil
1/2 small onion
3 to 4 medium/large Roma tomatoes (ripe)
1/2 garlic clove
2 serrano peppers or jalapeño peppers
Cilantro
Salt
Set oven to broil. Remove core from tomatoes and stems from peppers. Place onion, tomatoes, garlic clove, and peppers in baking dish. Drizzle olive oil over ingredients. Place in oven for 5 to 10 minutes or until dark brown on top of tomatoes and turn; heat for an additional 5 minutes. Remove from oven; add all ingredients including a handful of cilantro leaves in electric chopper or food processor. Blend together and add salt to taste. Serve with chips.
