School is out and the kids spend a whole lot of time looking to me to entertain them. My mind, of course, is blank. Children’s literature to the rescue! Who doesn’t love Eric Carle’s classic The Very Hungry Caterpillar (1969)? Let’s make refreshing fruit salad inspired by the book!

The Very Hungry Caterpillar eats a lot of different fruits, one at a time. You can enjoy bite-size pieces of this fruit salad while you read along or listen to the story!
Ingredients:
1 apple, cored, peeled, and cut into bite-size pieces
2 pears, cored and cut into bite-size pieces
3 plums, pitted and cut into bite-size pieces
4 strawberries, hulled and quartered
5 oranges, peeled, sectioned, and cut into bite-size pieces
6 to 12 fresh mint leaves
1) In a large bowl, combine the apple, pears, plums, strawberries, and oranges. Refrigerate for at least 30 minutes or up to 6 hours before serving.
2) Serve cold in small bowls garnished with 1 or 2 mint leaves.
