Gooey Butter Cake
I once happened upon a shop that makes custom ice cream sandwiches. You can choose from a variety of cookies, and one labeled “gooey butter” caught my attention. A love affair was born, and now Gooey Butter Cake has a piece of my heart.

1 box (18.5 ounces yellow cake mix
1 egg
½ cup (1 stick) margarine
1 box (16 ounces) powdered confectioners sugar
2 eggs
1 package (8 ounces) cream cheese, softened
Mix cake mix, egg, and margarine. Press into greased 12-by-9-inch pan. Beat remaining ingredients until smooth. Spoon over unbaked first layer. Bake 40-50 minutes at 350°. Sprinkle powdered sugar on top after baking, if desired. Makes 12 – 14 servings.
