Sweet and Spicy Tomato Soup
I’ve said it before, and I’ll say it again… if I find a tomato soup recipe, you’re going to read it. It amazes me how different they all are, yet so very much the same.
Buon Appetito! The Best From San Antonio’s Italian-American Families, Cookbook Committee of the Pompeo Coppini Lodge, #2712 Order Sons of Italy in America, 2000
Sweet and Spicy Tomato Soup, as provided by Joanna Hansen
5 Tbsp. oil
2 stalks chopped celery
1 chopped onion (small)
1 chopped green pepper
1 tsp. seeded hot pepper
1 clove minced garlic
1 Tbsp. brown sugar
½ tsp. cinnamon
5 ripe tomatoes, peeled and chopped
Sauté celery, onion, pepper, and garlic over low heat, about 8 minutes. Add balance of ingredients except sour cream and simmer, covered, 10 minutes. Serve with sour cream on top.
