Cinnamon-Sugar Muffins
I saw The Cowgirl’s Cookbook on a shelf and knew instantly that I had to have it. I just knew it would bring me a few really great recipes… and boy was I right!

1 ½ cups all-purpose flour
¾ cup sugar
2 teaspoons baking powder
¼ teaspoon salt
¼ teaspoon nutmeg
½ cup milk
1 egg, well beaten
1/3 cup, plus 2 tablespoons butter, melted
½ cup sugar mixed with 1 teaspoon cinnamon
Preheat oven to 400 degrees. In a medium bowl, mix flour, sugar, baking powder, salt, and nutmeg with a wire whisk. Combine milk, egg, and 1/3 cup melted butter in a small bowl. Pour wet ingredients into dry ingredients and mix well.
Grease muffin tins or use paper liners and fill about two-thirds full. Bake 20 minutes. Brush remaining melted butter over the tops, then sprinkle on the sugar-cinnamon mix.
Makes 12 muffins.
