Chocolate Cookie Sandwiches
Not too long ago, I discovered that oatmeal crème pies have been joined on store shelves by chocolate chip cookie sandwiches and peanut butter cookie sandwiches… lots of yummy looking stuff. However, nothing beats a homemade special treat…

Chocolate Cookie Sandwiches
½ cup shortening
1 cup sugar
1 egg
1 teaspoon vanilla
1 ½ cup HERSHEY’S Cocoa
½ teaspoon baking soda
½ teaspoon salt
¼ cup milk
Crème Filling
Cream shortening, egg, and vanilla in large mixer bowl until light and fluffy. Combine flour, cocoa, baking soda, and salt; add alternately with milk to creamed mixture until ingredients are combined.
Drop by teaspoonfuls onto ungreased cookie sheet. Bake at 375° for 11 to 12 minutes or just until soft-set (do not overbake). Cool 1 minute. Remove from cookie sheet, cool completely on wire rack. Prepare Crème Filling. Spread bottom of one cookie with about 1 tablespoon filling; cover with another cookie. Repeat with remaining cookies and filling. About 15 filled cookies.
Crème Filling
2 tablespoons butter or margarine, softened
2 tablespoons shortening
½ cup marshmallow crème
¾ teaspoon vanilla
2/3 cup confectioners’ sugar
Cream butter and shortening in small mixer bowl, gradually beat in marshmallow crème. Blend in vanilla and confectioners’ sugar; beat to spreading consistency.
