POTATO PANCAKES
I was gifted the most interesting cookbook. It’s an eleventh edition printing of the Fredericksburg PTA cookbook, which was first published in 1916. There’s a whole section on foods that are traditional German, celebrating the heritage of the city. Thanks to friend for celebrating my work and gifting me with such a fun piece of history!

Kartoffelpuffer (Potato Pancakes)
4 or 5 medium potatoes, peeled and grated; 1 tablespoon minced onion; 1 egg; 2 tablespoons flour; 1/2 teaspoon salt; 1/4 teaspoon hot pepper sauce, optional; 1/8 teaspoon nutmeg; 3 tablespoons butter.
Spoon excess liquid from grated potatoes. Add rest of ingredients and mix thoroughly. Drop by scant ¼ cupfuls into 1 tablespoon hot butter in skillet over medium heat. Spread flat with spatula. Fry until golden brown on both sides. Add more butter as needed for frying. May be mixed in blender, starting with the egg, then diced potatoes with rest of ingredients. Delicious with applesauce; peaches, canned or fresh; other prepared fruit; or syrup. Serves 4 to 6.
