The Big Pancake – “Texas-size, one might say.”
As printed in Texas Celebrity Cookbook, by Russell M. Gardner & Chris Farkas, 1984 Provided by Jim Blue, News Anchor at KAMR-TV, Amarillo, TX
1 1/8 cups Bisquick mix
1/2 cup buttermilk
1/8 cup oil
1/8 cup honey (preferably buckwheat flavor)
1 egg white
Heat oven to 425°. Grease an 11×7-inch pan. Combine all ingredients and mix until blended. Spread batter evenly into prepared pan. Bake 10 to 15 minutes. Cut into serving pieces. Serve with butter, jelly, syrup, or honey. Serves 2 to 4. Note: Recipe can be doubled using 1 whole egg and baked in a 15×10-inch jellyroll pan.
