Stonewall Jackson’s Green Chili Soup
Wishful thinking has me pondering cooler temperatures and warm meals. I know it’s not happening yet, or anytime soon, really. Let’s dream about it together over some Green Chili Soup.
From Texas Longhorn Cookbook and Campfire Tales by The Texas Longhorn Breeders Association of America, 1998
From The Stonewall Jacksons, Stonewall Valley Ranch, Austin, TX
2 lbs Longhorn lean ground beef
1 large onion, chopped
1 (7 ounce) can chopped green chilies
2 (10 ounce) cans Rotel tomatoes
1 tablespoon salt
2 – 3 teaspoons garlic powder
1 teaspoon cumin
2 large potatoes, cubed
1 – 2 (16 ounce) cans Ranch style jalapeno beans
2 quarts water.
Brown meat and drain all excess fat. Cook onion with meat and add chilies and tomatoes. Let simmer a few minutes to blend flavors. Add seasonings. Add potatoes, beans, and water. Simmer 1 – 2 hours. Serves 8.
