Cheese Popovers
Have you ever had a popover? It’s a biscuit-like bread roll… thing. They’re typically soft, yet crisp, with an airy texture that is out of this world. I am not talented enough to make them right, as of yet. Try your own hand at these delights I found in an old Cotulla publication!

1 c. flour (sift before measure)
1/4 tsp. salt
1 c. skim milk
2 large eggs
2 oz. (1/2 c.) grated Cheddar cheese
Heat oven to 375°. Put flour and salt in medium bowl. Add milk and eggs; beat 1 minute until smooth. Stir in cheese. Fill ½ full 12 muffin cups (spray with Pam). Bake 40 minutes. Slit side and bake 5 minutes. May freeze and reheat.
