A favorite simple dessert gets a creamy addition, and somehow becomes so much more than just a brownie.
Marble Brownies

½ cup all-purpose flour, plus more as needed
½ cup unsalted butter
4 oz. milk chocolate chips
3 large eggs, at room temperature
1 cup sugar
Pinch of fine sea salt
½ Ib. cream cheese, softened
½ teaspoon pure vanilla extract
- Preheat the oven to 350°F. Coat a square, 8-inch cake pan with nonstick cooking spray and dust it with flour, knocking out any excess.
- Fill a small saucepan halfway with water and bring it to a gentle simmer.
Place the butter and chocolate chips in a heatproof bowl, place it over the simmering water, and stir until the mixture is melted and smooth. Remove the mixture from heat and let it cool for 5 minutes.
- Place 2 of the eggs and three-quarters of the sugar in the work bowl of a stand mixer fitted with the paddle attachment and beat on medium speed for 1 minute. Add the chocolate-and-butter mixture, beat for 1 minute, and then add the flour and salt. Beat until just combined and then pour into the prepared pan.
- In a separate bowl, combine the cream cheese, remaining sugar, remaining egg, and vanilla. Beat with a handheld mixer on medium speed until light and fluffy. Spread on top of the batter and use a fork to stir the layers together. Place in the oven and bake for 35 minutes, until the top is springy to the touch. Remove, allow the brownies to cool in the pan, and then cut into bars.
