Somehow, one of the simplest recipes I’ve ever shared here is one that just sounds absolutely scrumptious. Cheese and jalapeños are obviously big winners in my taste, so maybe I’m biased… but what a great simple breakfast idea!

1 small can (11 ounces) jalapeño peppers (nacho slices, mild, hot)
1 cup grated cheddar cheese
3 eggs, slightly beaten
Salt and pepper to taste
Line bottom of baking pan with sliced peppers; cover with cheese. Combine beaten eggs, salt, and pepper. Pour over cheese. Bake at 350° for 20-30 minutes. Allow to cool slightly before slicing. If you use a deep dish, use 2 cups of grated cheese and 5 eggs. Serves 8.
