Ever hear a dish talked about on a movie or television show and suddenly needed it? Ratatouille was on a list of things I might need to try, until I realized it’s nothing like what the movie shows. But this… this comes from a certain show about a ranch and once they said garlic, butter, and steak, I was on board.
Lee’s Garlic Butter Steak Bites

As printed in Yellowstone The Official Dutton Ranch Family Cookbook by Gabriel “Gator” Guilbeau, with Kim Laidlaw, 2023
Ingredients
2 lb New York strip steaks, trimmed and cut into 1-inch cubes
Kosher salt and freshly ground black pepper
4 tablespoons unsalted butter
4 cloves garlic, crushed
Chopped fresh flat-leaf parsley leaves for garnish (optional)
Instructions
Place the steak cubes I a bowl and season all over with salt and pepper. Toss to coat.
In a large cast-iron frying pan over medium-high heat, melt half the butter. Add the steak and sear until nicely browned on one side, about 2 minutes. Flip the pieces, add the garlic, and sear the other side, 1-2 minutes longer. Transfer the steak to a plate, sprinkle with parsley, if using, and serve at once.
