I feel like everyone has a pasta dish they feel “safe” with choosing or hearing on the menu. Add this to your recipe book for the nights that you need that safe and comfort food dish, but home is where you want to be.
Parmesan Chicken, from Lone Star Legacy by the Austin Junior Forum, 1981, as provided by Mrs. Norman Snider (Natalie)

1 fryer, skinned and cut in pieces
1 stick melted butter
2 cups cracker crumbs
½ cup grated Romano cheese
½ cup grated Parmesan cheese
¼ cup chopped parsley
1 teaspoon garlic salt
Salt and pepper to taste
Dip chicken pieces in butter, then in a mixture of remaining ingredients. Place chicken in a large baking pan and bake uncovered at 350° for 1 hour. Serves 4 to 6.
